Marinated Satay Chicken Skewers

Impress the family at the summer BBQ with this super simple and delicious satay skewer recipe using our natural peanut butter🥜

You will need:

2 Chicken breasts (Approx. 350g)

Juice of half a lime

1 tsp honey

1 tbsp soy sauce

1 tbsp curry powder

165ml (Approx. 1 can) coconut milk


Instructions:

Mix the lime juice, honey, soy sauce, curry powder and our natural peanut butter in a small bowl to form a sauce. Add a splash of water if it’s too stiff.


Transfer to a small pan and add 165 ml of coconut milk and heat gently for 5 mins on a low heat, stirring continually, until combined.


Dice up your raw chicken breast into chunks and add to a bowl with most of your satay marinade mixture (save some for dipping later)!


Coat your diced chicken in the satay mixture and leave to marinate for at least 20 minutes (or overnight in the fridge ready for the next day.


Thread up your skewers with your marinated chicken chunks (if your skewers are wooden, soak them in water first) and cook on the BBQ or in the grill until the chicken is cooked all the way through.


Serve up with your dipping sauce and enjoy. We recommend enjoying your satay chicken Greek gyros style, on a flatbread with some tzatziki!
